    Good News About Chocolate

    Chocolate may be a good source of essential nutrients. Studies done by the Mayo Clinic, University of California, and Pennsylvania State University are saying that chocolate is a potential source of nutrients that can assist your body.

    Chocolate contains phytonutrients, those nutrients often found in fruits, vegetables, and bitter foods such as coffee, green tea and chocolate. Phytonutrients have been linked to cancer and heart disease prevention. A Harvard University study showed that men who ate chocolate lived about one year longer than men who did not.

    Chocolate also contains antioxidants or flavanoids, in particular, which may help to prevent cardiovascular disease. Antioxidants help prevent or delay certain damage to the body's cells and tissues as well as fight against free radicals. Not all chocolate contains an equal health benefit potential, however.

    Dark chocolate contains more than twice the amount of antioxidants as milk chocolate and has fewer calories. White chocolate contains no cocoa, and therefore holds no potential for nutritional benefits. If you want to incorporate chocolate into your diet, dark chocolate would be best.

    Although high in calories, chocolate is not high in cholesterol. A recent study done by the Mayo Clinic showed that flavanoids help cut back on "bad" cholesterol while raising the levels of "good" cholesterol. Chocolate and cocoa butter contain a main saturated fat, called stearic acid, which is a neutral fat and does not appear to raise LDL, which is the "bad" cholesterol. The one mono-saturated fat found in chocolate and cocoa butter is oleic acid, which may raise "good" cholesterol levels.

    Wolfgang Amadeus Mozart was one of the most versatile and brilliant composers who ever lived. Born in Austria in 1756, he composed magnificent works in all genres of music during his short life. Mozart performed on harpsichord, organ, and piano as well as composing instrumental and vocal music.

    Born in Salzburg, Mozart received his musical training from his father Leopold Mozart, who was a violinist and composer in his own right. At the young age of six, Mozart was performing on the violin, clavier, and organ and was able to improvise as well as sight-read music. It was at this age he toured for the first time through the courts of Europe. Together with his father, Mozart traveled through Germany, France, England, and Italy, composing as he went. It was during these travels that he met Johann Christian Bach, the son of Johann Sebastian Bach. Mozart used the younger Bach and other composers of his time to serve as models as he developed his composing skills. By the age of 11 Mozart had transformed piano works to include full orchestra.

    Mozart's travels served as a source of inspiration. He composed great operas and symphonies, as well as string quartets and sacred works during his travels. Mozart was often commissioned by the courts to write music for royalty.

    While working in Germany in 1777, Mozart fell in love with a singer named Aloysia Weber. However, when Aloysia did not return his love Wolfgang married her sister Constanze. Mozart continued to compose very successfully after his marriage and won the respect of Austrian composer Joseph Hayden, who was a very prominent figure in music of this time. Mozart dedicated a composition of six string quartets to Hayden, his inspiration and admired friend. Mozart's most impressive works were completed in the last decade of his life. His use of chromaticism, as well as his use of the clarinet made his work truly unique for this time period.

    Wolfgang Amadeus Mozart successfully composed until the time of his death at the age of 35. He left several unfinished works upon his death. One of the most celebrated of his sacred works is the unfinished Requiem. The cause of Mozart's death has never been determined for certain and is still left to speculation. However, one thing is known for certain. His memory lives on today, with his contribution to our musical history and culture.

    Question: Dark, milk and white chocolate; what's the difference?
    Dark chocolate is often called "bitter" or "luxury" chocolate. Dark chocolate has a high percentage of cocoa solids (at or about 75%) with very little sugar added. It has an intense, rich flavor and a beautiful dark color. Dark chocolate is wonderful to eat and is the chocolate of choice for cooking or baking.

    Milk chocolate contains milk and approximately 20% cocoa solids. It has a milk flavor and is sweet. It is delicious to eat, but is generally not used in cooking or baking.

    White chocolate does not contain any cocoa solids, but receives its flavor from cocoa butter. It is a very sweet chocolate and if it is of high quality will be quite smooth and rich.

    When traveling by air, or when your travels are extended, take along a collapsible duffel bag packed inside your other luggage. It can be used to collect laundry while you travel leaving space inside your sturdier luggage to bring back those special souvenirs or sweets you choose as gifts.     The Recipe Box: The Best Chocolate Brownies
    Preheat oven to 350°. Line, or grease and flour an 8" square baking pan.

    ½ c. butter, lightly salted
    1/3 c. cocoa
    2 eggs
    1 c. sugar
    ½ c. self-rising flour
    3/4c. walnuts
    2 oz. Semi-sweet chocolate (optional)

    Melt butter in a small, but heavy saucepan and stir in cocoa until blended. Set aside. Beat eggs until light and fluffy. Gradually add the sugar and chocolate mixture.

    Sift flour and fold it into the chocolate mixture Pour mixture into pan and bake for 30-35 minutes. Do not overbake.

    Cool and cut into squares. If you desire, melt semisweet chocolate and spread over the cooled brownies before cutting them into squares for serving.
