Welcome! Does it feel like spring has come to your
area yet? It is March, and St. Patrick's Day is just
around the corner along with beautiful spring days. It is
our hope that as you read our March
edition of the Harmony Herald your thoughts can
escape to a warmer or more relaxed time- a time of
rejuvenation- a peaceful "spring break" if you will.
Being of Irish (McCauley*) heritage, March has always
been a special month for me, and therefore this month's
newsletter will feature a "Luck of the Irish" and St.
Patrick's Day theme.
Enjoy learning a little of the history of the traditional
Irish Folk Song "When Irish Eyes are Smiling", and take
a
journey in our travel section to Ireland to experience

On a Musical Note: When Irish Eyes Are Smiling |

When Irish Eyes Are Smiling, a popular
American Folk Tune was first published in 1912. The
Lyrics were written by Chauncey Olcott and George
Graff Jr. Although Olcott was from Buffalo, New York
he held a deep devotion for Ireland. The music was
written by Enerst Ball, also a man with a heart for Irish
heritage. The song was written for Olcott's New York
stage production entitled The Isle O'Dreams.
Chauncey Olcott produced several shows reflecting his
love of Ireland and also wrote both lyrics and music for
other hit songs including My Wild Irish Rose.
When Irish Eyes are smiling,
sure,'tis like a morn in spring.
In the lilt of Irish laughter
You can hear the angels sing.
When Irish hearts are happy
All the world seems bright and gay.
But when Irish eyes are smiling
They can steal your heart away

The Recipe Box Double Chocolate Mint Bars |

Double Chocolate Mint Bars
1 c. flour
1 c. sugar
1 c. plus 6-9 T. butter, softened
1 t. vanilla
4 eggs
1 (16oz) can chocolate syrup
2 c. confectioners' sugar
1 T. peppermint extract
3 drops green food coloring
2 c. semisweet chocolate chips
Combine the flour, sugar, ˝ c. of the butter, vanilla,
eggs and chocolate syrup in a mixing bow. Beat until
smooth. Pour into a buttered 9 x 13" baking pan. Bake
at 350 degrees for 25 - 30 minutes or until top springs
back when lightly pressed. Cool completely.
Combine the confectioners' sugar, ˝ c. butter, water,
peppermint extract and green food coloring in a mixing
bowl and blend well. Spread over the cooled chocolate
layer. Chill, covered, until very cold. Melt the
remaining butter and chocolate chips and drizzle evenly
over the mint layer. Chill and serve. Yield: 1 ˝ to 2
dozen.

The beauty of Ireland is framed within its large bays,
scenic rivers, and peninsulas. There the mountains
seem to cascade down to the shore to meet the
majestic sea. It is in that picturesque setting that you
can find some of the best golf in the world. Late spring
is the perfect time to go-just before the high season
when even more visitors will be drawn to the area.
If you are a golfer who enjoys the walking aspect of
the game you will be delighted golfing in Ireland.
Golfers walking with pull carts which they call "trollies"
are the norm instead of electric carts, which they
call "buggies". Walking gives you the opportunity for
excellent exercise and actually keeps the play moving
on the course and at the same time offers the
opportunity for some socializing throughout the game.
However, keep in mind the Irish do take their golf rather
seriously and would like the beginner to put their time in
at the practice range as they do like efficient play.
The true-links style golf that Ireland delivers includes
courses such as Lahinch and Ballybunion, which Tom
Watson labeled "the best links course in the world".
Links golf allows the lay of the land to have its say with
your ball- you simply take what the course hands you!
However, if target-style golf is more to your liking you
can find courses which will accommodate you well,
such as Tralee, designed by Arnold Palmer.
Old Head, a phenomenal course which sits on land
that juts out into the Atlantic Ocean, was built
entirely on rock. North of Old Head you can play Mt.
Juliet, a Nicklaus signature course. These, although
more American in style are worth a visit!
